You probably know it as “the stuff that’s in a Caipirinha,” and not much else, but the Brazilian spirit Cachaça, despite the hard-to-sound-out name (ka-sha-sa) deserves some attention. Cachaca is made from the fresh juice you get from pressing sugarcane, while most mainstream Rum is made from molasses, which has been boiled and caramelised into the sticky stuff you’re familiar with. There’s one exception-Rhum Agricole from the Caribbean is made from cane juice, like Cachaça, but differences in processing (Rhum is distilled with the stalks in the mash then aged in different woods) set them apart from each other.
The Pura is unaged, and has a spice that you wouldn’t get from most white Rums. While there’s a clear sugarcane taste going on, the dry pepperiness is almost closer to a Tequila. It’s great in a Caipirinha–essentially a Cachaça daiquiri–and works just as well as a sub for white Rum in any cocktail out there.
